One of the many things I’ve learned about myself since losing 75 pounds and continuing a lifetime of managing my weight, is that I actually ENJOY the challenge of making healthy eating TASTY & SIMPLE. If a recipe or food idea isn’t efficient and quick to organize then I’m probably not interested! I love sharing my finds and when I did, folks would always asking me if I had it written down somewhere. A-HA! The birth of Tasty Tuesdays! As you will see quickly, most are not recipes but rather clever tips and tricks for healthy food ideas. They have really helped many busy people keep from getting bored while still eating healthy and in control. Hope you find enjoy them as much as we do!

Throw Back Tasty Tuesday Recipe

All The Ingredients You Need For 0 PointsPlus Banana Icecream! An oldie but a goodie!  This recipe is so simple yet so delicious and it’s perfect for these hot summer days.  If you have never tried it, you will be amazed!   If you used to eat it but have forgotten about it, you’ll be amazed all over again!! Think creamy, rich, homeade icecream and yep, that’s about what you’ll get with a SmartPoints value of ZERO! Crazy, huh? Try it! INGREDIENTS 1 Frozen Banana* 2 Tablespoons Unsweetened Vanilla Almond Breeze 2 Pkts Splenda (optional) 1 teaspoon vanilla extract Fat Free ReddiWip** (optional) In a mini food processor (a blender will work, but to get icecream consistancy, which is the whole point, a food processor works best) mix all ingredients until smooth and creamy. Pour into dish and garnish with Reddiwip or fat free Cool Whip for just one additional SmartPoint. That’s it! Tasty Tuesday Lentil Soup

As we push through the last few weeks of cold weather, I thought I’d share one more very low SmartPoint, hearty soup to get us through!! This comes from the kitchen of my dear friend Ursula, who was kind enough to send her recipe to me. Lentil soup Total SmartPoints = 7 Yield = Approx 8 servings @1 SmartPoint each Ingredients 2 tsp olive oil 1/2 cu chopped celery 1 med onion chopped 1 medium yellow potato peeled and cubed 1/2 tsp mild curry 1/2 tsp turmeric 1/4 tsp cinnamon 1 -28 oz can diced plum tomatoes with juice 1 cu red lentils 1 can chickpeas rinsed and drained 1 tsp Salt Juice of 1 lemon 1 tbsp balsamic vinegar 4 cups water Sauté onion, celery, and potatoes with curry, turmeric, and cinnamon in olive oil 5-8 min. Add canned tomatoes and cook another 10 min Add 4 cups of water with lentils, chickpeas, and Salt.  Bring to boil, then simmer 45 min to an hour.  Check liquid level, can add more water if needed. I’m super excited to share my latest food find!! It’s low in Smartpoints and high in comfort food satisfaction!! Just the combo I’ve been craving on these cold, winter nights!! How about you???? Turns out, one serving (1/4C) of Manwich sauce is only 1 SmartPoint, which got my attention right away since extra lean ground turkey is now Z*E*R*O SmartPoints! Woohooo….bring back the sloppy joes from childhood! So here’s what I did: 1. Sauté finely diced onion, green pepper and and red pepper in a non stick pan. 2. Add a pound of extra lean ground turkey and sprinkle with some garlic seasoning. Cook thoroughly. 3. Once it was cooked through, add a can of Manwich sauce and let it simmer. 4. The sloppy joes I grew up on had a more sweet flavor, so I also added a little Stevia and salt to mine while it was simmering. 5. Serve a heaping helping over an open faced Healthy Life hamburger bun (2 Smart Points). 6. ENJOY! I estimated 1/2C of sauce for my portion, so that’s 3 Smart Points+ 2 SmartPoints for the bun. 7. One Of My Tasty Tuesday Favs!!!

Happy Tuesday, Everyone!!   This is a great fall dessert and not only tastes delicious but will also make your house smell wonderful while it’s baking!!!  This fruit crisp is low in sugar and has plenty of fiber so it will leave you feeling satisfied instead of sluggish!!  It’s super low SmartPoints values and I promise you’ll enjoy it! Fruit Crisp Serves 2 3 SmartPoints values per serving  Ingredients  – 1 large bag of frozen peaches or fruit of choice. Fresh cut apple slices work well too!! – 2 individual cups of WW no sugar added oatmeal. It comes in Peach Cobbler and Apple Cinnamon right now. Both are delish and on sale at Weight Watchers👍🏼 – 1/2 can of diet Sierra Mist or other lemon-lime diet soda – Cinnamon and Stevia or Splenda-to taste Easy Peasey  1. Preheat oven to 375* 2. Spray a baking dish with non stick cooking spray. 3. Empty full bag of frozen fruit into the baking dish 4. A Tasty Tuesday Treat

I’m usually not a fan of frozen ice cream bars, but this one shared by my dear friend, Anne, turns out to be a incredibly delicious!! I’ve been looking for a low sugar dessert that is low in calories and SmartPoints. W-O-W was I surprised how much I like it and it’s only 3 Weight Watchers SmartPoints!!!!   I like the Halo Top ice cream a lot… A LOT…as in too much!!   I find it hard to portion half a cup out of the pint containers!!  It’s really easy to eat the whole container and although it’s significantly lower in SmartPoints than a DQ Blizzard or even most other lightice creams….it’s still too much.  Besides loving the preportioned size of the Enlighten Bars, the frozen hot chocolate has little bits of marshmallows and chocolate pieces that make it very, very tasty and more like a “real” treat.  It definitely doesn’t taste like “diet food”.  They also have a sea salt Carmel flavor but I haven’t tried that one yet. BLT Salad = 3 SmartPoints This is a food idea I’ve shared before at this time of year and now the SmartPoints for it are actually lower than they were on the previous points plan, so it’s even better!!!  It’s very tasty and definitely worth mentioning again!   We have tons of  beautiful, dark red, ripe tomatoes friends have been bringing over from their gardens and this BLT salad creation is one of my favorite ways to eat them!!!  As you can see in the photo, Oakley, who can smell bacon from a mile away, is a big fan of it too! Simple, simple, simple. All I did was fill the bottom of my glass dish with shredded lettuce. I buy my lettuce already shredded, but that’s up to you. Then I used Miracle Whip in a squeeze bottle and zig zagged about 2T over the lettuce. Next I cut up two ripe tomatoes into small chunks, salt and peppered them to taste and put on top of the Miracle Whip layer, juice and all. Terra’s Tasty Tuesday

Ohhhhh…..This is a great find!  I like protein bars but so often they are loaded with sugar and extremely high in SmartPoints, so that makes most of them a big NO for me. Quest on the other hand, really does it right!  Several of their bars are only 4 SmartPoints with 20 grams of protein, 13-15 grams of fiber, 1 gram of sugar and DELICIOUS!!  I highly recommend chocolate chip cookie dough, double chocolate chunk and their brand new bar…oatmeal chocolate chip, pictured above. YUM!  A great snack to keep in your desk drawer, glove box or purse that won’t waste your SmartPoints when you need a snack. You can find them most anywhere, but I order mine from Amazon Prime and get a discount for ordering them on a regular basis.   Delievered to my house AND less expense??   Yep!!  Works for me!!! ZERO Smart Points Dessert!

At our Weight Watchers meeting in Schaumburg last week, a member shared her baked apple recipe with us and it was SO delicious I thought I’d pass it along to everyone! Very simple and besides tasting great and being ZERO Smart Points, it will also make your kitchen smell heavenly!  Ingredients  4 apples, peeled and cut into pieces (I prefer Granny Smith apples, but any variety will work) 1 can of diet soda (I used diet sprite but diet black cherry was recommended) A sprinkle of cinnamon Directions Preheat the oven to 375 degrees Spray a baking dish with butter flavored non stick cooking spray.  Place apples in baking dish.  Pour the entire can of soda over the apples and sprinkle with cinnamon.  Bake for 45 minutes or until the apples are tender. Enjoy! The absolute best part of Weight Watchers is the sharing of ideas and support we get from each other at the meetings. It really makes a difference in the choices we make throughout the week when we are able to attend a meeting and partake in the positive energy. OH YUM! Tasty Tuesday

Here’s what I LOVE about Trader Joe’s…..I can run in quickly and grab a complete meal that’s healthy, filling, delicious AND keeps me within my daily Smart Points target. All I have to do when I get home is warm it up and the fam is happy!!  Tasty, healthy, easy—-I’ll take it!!!!   These chicken and green chile tamales are the base of one of our staple meals in our weekly rotation.   Each tamale is 4 SmartPoints and they’re SO good, I never get tired of them!   Three tablespoons of TJ’s Guiltless Guac = 1 Smart Point. Or live it up and have up to 5T for only 2 Smart Points!   1/2 a cup of fatfree refried beans is 3 SmartPoints.  I warm up the beans and tamales.  Next I use a big salad bowl (doesn’t food in a nice big bowl just feel like comfort food???  Must be from all the casseroles I was raised on growing up!) and put in 2 tamales (8SPs), 1/2C of warm refried beans (3 SPs) and top with 3T of Guiltless Guac (1 SP) and lots of pico de gallo (0 SP).  It’s a fav meal at my house and […]

Tasty Tuesday-This One’s A Keeper!

STRAWBERRY CHEESECAKE FLUFF Because plain yogurt just isn’t “dessert enough” by it’s self! Oh do I love this one!!  It’s really been helping me stay on track, so I had to share! I’m a sweet tooth. Always have been and at this point, looks like I always will be!  This makes cutting back on added sugar a challenge.  Many of my old favorite sweet foods, even when reduced calorie, are still loaded with sugar and I can see (and feel) how they tend to make me crave more and more.  Oh, and then even a little more. Haha:-) I came up with this dessert concoction after lots of experimenting and because it fits all my criteria…. Super delicious!  Relatively low in added sugar. Has nutritional value and a good ratio of protein.  Very satisfying. Tasty Tuesday~Zucchini Noodle Jack Pot!

Zucchini “noodles” are getting RAVE reviews and since they are ZERO SmartPoints, I’ve been wanting to try them for a while now.  I even ordered my “Veggetti Pro” from Amazon, but I have been less than enthusiastic about taking the time to actually make them, so it’s never been used.  (Is it just me, or should they have tried to come up with better name for this gadget that turns vegetables into spiral-like-noodles??) So, last week, when I was walking through my Jewel produce section and I stumbled across zucchini noodles already cut, I felt like I hit the zucchini noodle jackpot!  Some of you have told me Jewel cuts these fresh, but this is the first time I’ve seen them and I was elated! Terra’s Tasty Tuesday!

It’s back to school season and boy, can we feel it!  Don’t even think about going to the Geneva Commons (the local outdoor mall in my area) or Target without planning to wait in long lines!  Seems as if everyone is out scrambling to purchase school clothes and supplies this week!! One of my favorite breakfasts on school days, growing up was peanut butter toast.  The whole  back-to-school vibe in the air reminded me of it, so I decided to make it and WOW–it’s a good as I remember!   I made a few easy modifications to it so it’s now worth the SmartPoints it costs me and it’s now my new favorite snack!!  Who doesn’t love a warm, sweet, gooey treat anytime of day???? Here’s what I use: Healthy Life English Muffin, toasted- 2 Smart Points each.  Smuckers Sugar Free Preseves-0 Smart Points. Red raspberry is my favorite, but I rotate flavors :-)) Better n’ Peanut Butter- 2 teaspoons is only 1 Smart Point. I like this product a lot and find it at Trader Joe’s. Tasty Tuesday Fried Rice

OK—Be honest, doesn’t this look just like fried rice you’d order from a Chinese restaurant???   Well, it’s not!  Miracle of all miracles, first, it’s almost 100% veggies (=super low in Smart Points) and second, it’s so easy I made it myself in no time! I’ve heard a lot about riced cauliflower but the process of “ricing” it myself was not appealing, so when a friend told me about the Trader Joes brand, I thought it was time I gave it a try and what better way to eat rice than fried?? Faux Fried Rice Entire recipe =6 Smart Points Servings: Depends on portion size…it’s your call! 1 Bag of riced cauliflower 1 1/2 C  Steamed mixed veggies 1 Egg & 2 Egg whites 1/3 C minced onion 1T Minced garlic Using non fat cooking spray, sautéed the onion and garlic til soft.  Stir in cauliflower and continue stirring as it sautéed so that it doesn’t burn. It takes about 5 minutes for it to soften up like rice. While that was going on, I put my steamer bag of mixed veggies in the microwave. I have to tell you…I ended up making all 3 recipes myself (I’ve come along way, right??) and the Wheat Berry and Beet Salad along with the Oooey Gooey Bars really are KEEPERS!  Both were DELICIOUS!  As I said on the show, you could buy the beets already roasted and if I were to make it again, I would definitely go that route.  Scrubbing, roasting, peeling and cutting bright red beets is a hassle, in my opinion and as yummy as they were, the ones from Trader Joes […]

Now on to Tasty Tuesday…… I’m really trying to cut back on snacking and sticking to healthy meals instead, but when I do snack, I want the foods to have volume.  Low SmartPoints with big portion….I’m value shopper in that way!! We eat a lot of air popcorn at my house but we’ve recently been buying this Smartfood Delight popcorn and it’s really, really good, so I thought I’d share it.  The flavors I’ve found that say “Delight” are Sea Salt Carmel and Sweet & Spicey BBQ.  Yum. Sweet Tasty Tuesday

In the eternal quest for the perfect after dinner sweet treat that isn’t loaded with sugar, I’ve recently found this yogurt that surprisingly fits the bill!!  I know….it’s yogurt….but the chocolate “sauce” on top really does make it taste like a little sundae!  I’m not exactly sure how they make the sauce but it’s good!!   The consistency is thin, similar to chocolate syrup and although it’s not, it still tastes really good eaten bite by bite with the thick, creamy flavored Greek yogurt on the bottom. It’s 3 SmartPoints and comes in a few flavors. My favorites are the cherry, strawberry and vanilla. The banana sounded good but went from yummer to bummer quickly, so I’d avoid that one.  I get it at Meijer or Jewel but I think you can find it at most grocery stores. Super Simple Tasty Tuesday!!

Just TWO SmartPoints each!  Need I say more??  Well, I’ve never been one of few words and it gets even better, so you know I can’t end the post here!!  These hearty spinach & mozzarella chicken sausages are precooked and taste just as good prepared in the microwave as they do on grill if you’re short on time.   You know I wouldn’t post them if they weren’t DELISH!!   I like the apple maple flavor too! Still hungry after one?  Have another without worry of any extra “hidden” SmartPoints finding their way into your tracker.  1 sausage = 2 SmartPoints. 2 sausages = 4 SmartPoints. Nice, huh?? My son, Cole, is home from college for the summer. He’s a football player and very carb conscious, so instead of serving the chicken sausages on Heathy Life hot dogs buns (only 2 SmartPoints each) like I used to, we now serve them over sautéed peppers and onions and I think they taste even better!   If not better, at least as good and definitely more filling!   For the two of us (Chase, my 15 year old son, still sticks to his mac & cheese), I sauté one bag of Trader […]

Terra’s Tasty Tuesday :-))

I may have posted this before, but it’s one of my all time favorite junk food “hacks” so it’s worth a second mention!!  I actually had this snack for dinner last night because I was just in that kind of mood!   I’m a dipper. There it is. My secret is out. I love to dip almost anything, so I came up with a super easy, healthy, protein packed dip that’s only 2 SmartPoints!  Just add dill & garlic salt to an individual serving container of Greek yogurt (I prefer Fage 0%), stir well and you have 6 ounces of dill dip for only 2 SmartPoints.  Woohooo!  It pairs great with fresh, cut up veggies, but it tastes more like “junk food” eaten with Sea Salt Veggie Straws. It’s well worth the 4 SmartPoints for 38 straws!!  Or go crazy and have 60 straws for 6 SmartPoints…you’ll have more than enough dill dip to go along with them! Terra on TV & the Recipe!  Yesterday,  I was on WCIU, The U, morning show You & Me.  I meant to write a post to share the info with you before I went on, instead of after so you could tune in. Alas, some days there just isn’t enough time to fit it all in!!  Sorry about that! March is National Nutrition Month and I shared a few Weight Watchers tips on how to savor the flavor of eating healthy. If you click on the link, it should take you directly to it.  Below is the recipe from for the Chock-Full-Of-Goodness Bars that I made (with some help from my Mom….thanks Mom!) and talked about on the show.  The recipe requires a food processor, so they are a little time consuming to prepare (at least by my cooking-time-comfort-level-in-the -kitchen standards!) but my family and I agreed, it’s worth it because they are delicious and packed with nutrition. Terra’s Tasty Tuesday Taco Salad On The Go!!

Hey Everyone! Hope you’re surviving the polar vortex it feels like we have been living in for the past few days. Brrrrrrrrr, is an understatement! Today’s Tasty Tuesday is SOOOO good, if I do say so myself!!  I hesitated to put a photo up for this latest delicious discovery because it looks like leftovers. Uhhhh…..because it is leftovers!!  I didn’t really think of this food idea until after my family and friends had gobbled a lot of it up watching the NFL playoff games this weekend, so I didn’t bother to take pictures of it before we dug in! OK, so… it’s taco dip and it’s fabulous in every sense of the word. It tastes great but is also really low in SmartPoints and loaded with protein and fresh, healthy foods that your body can actually use. It looks and tastes like junk food, but don’t be fooled…it’s anything but!!! I’ve made it before and I knew it was good with tortilla chips as a dip but here’s the interesting part…….it also makes a phenomenal taco salad starter. So What’s For Din Din??

It’s Tasty Tuesday!!!! The key to living a healthy lifestyle consistently is to ENJOY the foods you’re eating and the activities that you’re doing to stay active.  If we are never going back, we have to honestly like the new way!!! The first thing I did when starting the new WW Smart Points food plan was to sit down and write out my favorite meals. Next, I looked up the SP values for them as they were originally prepared. Then I went to work remaking them to taste as delicious as possible but at a Smart Points value I could live with. I’m pretty happy with my list. It’s very liberating to have a bunch of low Smart Points value meals that I truly look forward to eating.  That, to me, is a “lifestyle”. The recipe below is one of my go-to dinners because it’s easy and tastes just as good reheated as it does when it comes out of the oven.
