Happy Wednesday Everyone!
First of all, I’ll be the GUEST leader for the 530pm meeting at Weight Watchers in DeKalb TONIGHT…Wednesday, October 21st. Sorry for the short notice! I meant to post it yesterday along with my Tasty Tuesday, but you know how it goes some days!! I’m only filling in this Wed night. The leader who usually facilitates it will be back next week😄
DeKalb might be a hike for some of you, but living in Elburn, it’s less than 30 minutes from my house. I used to lead the noon meeting there on Tuesdays a couple of years ago, so I’m hoping to see some familiar faces! The address is: 2583 Sycamore Road, DeKalb, IL 60115. Now for the Tasty Tuesday (that all too often shows up on Wednesday, but doesn’t sound as catchy with Wednesday, so I’m not changing the name)…..
SINGLE SERVE PUMPKIN PIE IN A JAR FOR ONLY 3 Points Plus!!!!
I’ve been cutting way back on my sugar. As you know, you can have anything you want on the Weight Watchers plan, as long as you stay within your daily Points Plus target. Ahhhh…….the catch! Therein lies the problem for me. Sweets are an area that I can very easily lose control of my eating when consuming. The more sugar I eat, the more sugar I want and need to feel satisfied. When I eat processed sweets, it seems like my daily Points are gone before I know it!! I’ve learned (over and over again) that the opposite is also true. The less sugar I eat, the less I crave and the easier it is for me to control portions. So this little dessert has very little sugar AND provides a serving of veggies too, while also being low in PointPlus values!! It tastes great (especially at this time of year) and the helping is generous and full of natural fiber, so you’ll feel satisfied. Woohoooo🎉🎊🎉…SCORE!! It’s not a new recipe. I’ve posted it before but I had forgotten about it, so thought you might have too! Try it! You’ll like it!!
1 Small Package of Sugar Free Cheesecake Jello Pudding (3 PointPlus value per box)
1 can of pumpkin solid packed pumpkin (0 PointPlus values)
3T Fat free Coolwhip (0 PointPlus values. It only goes up to 1 PointPlus value for 4-9 Tablespoons!!! You choose your serving size😄)
Pumpkin Pie Spice to taste
Combine all ingredients, scoop into jars OR spread evenly in a flat dish (see photo below) and refrigerate for at least an hour. Overnight is even better. When serving or eating, spoon cool whip on top. I added a couple of Teddy Graham’s because it looks cute, but they aren’t really worth the PointPlus values, in my opinion.
As always, these are just ideas! Most of you are far better cooks than me, so take the idea and run!! There are lots of possibilities!! Let me know how you like it!!
