Good Morning Everyone!

This recipe comes to us from a very successful Lifetime member who attends my 10a meeting in Schaumburg on Tuesdays. She’s been at her goal weight for several years and rarely misses a meeting. She will tell you and we know it to be true…the key to keeping the weight that you work so hard to lose off is to KEEP COMING TO MEETINGS! Besides, with all of US there, they are FUN, so who wouldn’t want to attend???

I left the recipe just as Ceil sent it to me, but you could certainly lighten it up even more, if you’re looking for a 1 or 2 PointPlus value alternative to mashed potatoes. As it is at 4 PointPlus values, it’s still a great value…Parmesan and real cream cheese…YUM! Either way, ENJOY!

Here’s the cauliflower receipe
Garlic Mashed Cauliflower

1 medium had cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or boullion
1/8 teaspoon freshly groound black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter, optional

bring pot of water to boil; cut cauliflower into small pieces.
cook in boiling water for about 6 minutes, or till well done.
drain well; do not cool but immediately pat very dry between
several layers of paper towels.
Using immersion blender or food processor, puree hot cauliflower
with cream cheese, parmesan, garlic, chicken base and pepper until almost
smooth. Garnish with chives and serve hot with pats of butter.
