Saw a couple posts with tasty, healthy recipes with cucumbers from my facebook friends and thought you might like to share for a tasty Tuesday idea. A couple great ways to use up those cucumbers!

Cucumber subs with turkey, green onions and Laughing Cow cheese! Yum!!
Thanks for the ideas, Mary! The cucumber sub has got endless possibilities!! I found that it is VERY helpful to core the middle of the cucumber out so that it holds more filling and is less likely to fall out the sides. See photo below. I liked my cucumber sub open faced too.
I haven’t tried the avocado salad yet, but what’s not to like?? I appreciate the ideas and hope everyone will give them a try while the veggies are so fresh and plentiful!

Avocado and Tomato Salad
4 cups avocados, diced medium
2 cups grape tomatoes or 2 cups cherry tomatoes
2 cups cucumbers, peeled and diced medium
1 cup red onion, diced small
4 tablespoons fresh cilantro, chopped
2 teaspoons fresh garlic, minced
2 tablespoons lime juice
1/4 cup olive oil
fresh black pepper
Lettuce (if you want)
Toss all ingredients in a bowl and top on a bed of lettuce (if desired)
