This SO Easy Caprese Salad is a great way to ssssssssssstretch out 1PP worth of string cheese to fill us up a lot more than eating by it’s self! Besides being simple to assemble, it actually tastes better as a “left over” the next day or two after making , so it’s the perfect veggie-based salad to make and have on hand throughout the week. I make it on Sundays or Mondays and store it in individual containers in my frig, so it’s easy to grab, throw in my cooler and GO. I like it as a side with my lunch (a girl can only eat so many canned green beans!) but, as with any salad, you could add a little protein and make it a meal, if you prefer. So Easy Caprese Salad
Makes 3 Generous Servings
1 PP each
1 Container of grape tomatoes, washed and sliced in halves (O Points Plus)
2 Sticks of Light String Cheese (1 Points Plus each)
2 Tablespoons Kraft Zesty Italian FatFree Salad Dressing (1 Points Plus)
Basil, sea salt and black pepper to taste
Dice string cheese into thin medallions. It’s surprising how many pieces you can get out of two sticks of string cheese! Add halved tomatoes, Italian dressing and toss. Sprinkle with basil, sea salt and black pepper to taste.
That’s it! Done! Doesn’t it look pretty? Almost gourmet! Well…….almost!
